Mum's homemade chicken soup

INGREDIENTS

Whole organic chicken

4 bay leaves

6 onions

10 carrots

4 large potatoes

4 sweet potatoes

5 sticks of celery

Salt and pepper

 

METHOD

  1. Place the whole chicken, bay leaves, 3 peeled onions and 4 peeled and roughly chopped carrots into a large pot. Cover the ingredients fully with filtered water and bring to the boil.
  2. Once boiling, turn down the heat to a heavy simmer for 1 ½ hours.
  3. While the water is simmering, peel and grate the remaining carrots, all the potatoes and sweet potatoes. Peel and chop the onions and finely chop the celery. Put to one side.
  4. After the required amount of time, take the pot off the heat and separate the ingredients from the delicious chicken broth. Keep the chicken to one side, but discard the rest.
  5. Place the broth back on the hob in the pot and add the grated and chopped ingredients, bring the pot to the boil. Remove the chicken from the bone, discarding the skin and bones, and placing the roughly chopped chicken into the broth.
  6. Boil for 10 minutes then the soup is ready.
  7. Serve with a slice of chilli on top and enjoy the feeling of being home.
