Mexican spicy red lentils

1 Tbsp olive oil

1 cup onions (chopped)

1 cup dry red lentils

3 cups water

1 can chopped tomatoes

1 Tbsp chili powder

1 Tbsp paprika

1 tsp Himalayan sea salt

½ tsp cayenne powder

1 – 2 cloves garlic (crushed)



  1. Add olive oil and onions to a pot and cook until they are starting to brown.
  2. In the meantime rinse the lentils and set aside.
  3. When the onions start to brown, add the rest of the ingredients and bring to a boil.
  4. Once boiling, turn down the heat to a simmer.
  5. Cook for 20-25 minutes or until lentils are tender.
  6. Garnish with fresh coriander and serve with tortilla chips.
