Homemade Granola (Gluten, Dairy and Sugar free)

A lovely breakfast and great for an afternoon nibble!

Ingredients

  • ½ cups almonds, walnuts and brazil nuts (or any combination of what you have on hand)
  • 2 cups buckwheat flakes
  • 2 cups quinoa flakes
  • 1 cup buckwheat groats
  • 1 pinch of salt
  • 4 tbsp olive oil
     

Directions

  1. Soak nuts in purified water overnight. *
  2. Preheat the oven to 160C (fan bake).
  3. Rinse the nuts and lay out on greaseproof paper on a tray. Cook for 45 minutes to 1 hour, tossing every 15 minutes. Cook until a golden brown.
  4. Mix the buckwheat flakes, quinoa flakes and buckwheat groats together in a large bowl.
  5. Add the olive oil to the dry ingredients and stir well so everything gets covered evenly.
  6. Pour the mixture on to greaseproof paper on trays and place in oven for 30 minutes, stirring every 10 minutes.
  7. Remove when golden brown and add the cooked nuts. Add salt to taste.
  8. Enjoy it with coconut yoghurt, fresh fruit, honey, coconut flakes or seeds on top.

*A helpful tip is to keep the different nuts separate when soaking and baking, as they cook at different speeds.
