cup raw almonds

cup raw pecans or 1 cup walnuts

cup flax seed

cup pumpkin seeds

cup sunflower seeds

cup olive oil

teaspoons salt

Summer Green Fritters

INGREDIENTS           

4 x grated courgettes

3 medium eggs

1 x whole broccoli, chopped finely 

3/4 cup buckwheat flour

1 cup almond milk

 2 tbsp rice bran oil

 

METHOD

Beat the eggs in a bowl, add the broccoli, courgettes and mix together. Add the flour and milk, mix again and season.

Dried anchovies

INGREDIENTS

1 cup of small dried anchovy

1 tbs sugar

1 clove garlic (minced)

1 tbs water

1 tbs olive oil

1 tbs sesame seeds

¼ cup of sunflower seeds

1 tbs sesame oil

 

METHOD

  1. Make sauce by mixing sugar, garlic and water in a small bowl. Set aside.

  2. Stir anchovy in a heated pan for 1 minute.

  3. Add olive oil and stir it for another minute.

  4. Push the cooked anchovy to the edge of the pan away from the heat.

Homemade houmous

INGREDIENTS

250g organic dried chickpeas (You can used tinned ones but it's extra creamy with the overnight soaked version)

1 lemon (juiced)

2 garlic cloves, crushed

Himalayan salt

1 tsp ground cumin

2 tbsp tahini (sesame seed paste)

4 tbsp water (save the water that you cooked the chickpeas in - or from the can)

3 tbsp organic sunflower oil

Variations you can also add:

Chilli - a pinch of chilli

Coriander - fresh coriander

Toasted sesame seeds

3 medium sweet potatoes (steamed and pureed)

2 cups Quinoa (cooked)

2 Eggs

½ cup buckwheat flour

1 tbspn corn flour

1 teaspoon fresh ground black pepper 

1 teaspoon Himalayan salt

4-6 tablespoons coconut oil (to pan fry them)

  • pinch of salt
  • 1 tablespoon water
