Nordic Stone Age Bread

INGREDIENTS

1 
cup raw almonds

1 
cup raw pecans or 1 cup walnuts

1 
cup flax seed

1 
cup pumpkin seeds

1 
cup sunflower seeds

1 
cup sesame seeds

1⁄3
cup olive oil

1 1⁄2
teaspoons salt

5

INGREDIENTS

2 x 275g packets of mixed seeds (pumpkin, sunflower and sesame)

1/4 cup of chia seeds

water

pinch of himalayan sea salt

oregano or chilli flakes for taste
 

METHOD

1. Place mixed seeds in to a large bowl and cover with cold water and soak overnight. 

2. In the morning, using a sieve, drain off any excess water.

3. Add chia seeds and salt to the bowl and any ingredients for taste, such as oregano or chilli flakes. 

4. Combine well.

Buckwheat spinach pancakes

Level | Medium

INGREDIENTS

150g buckwheat flour
2 large eggs
330 ml almond milk
150 ml water
1 tsp melted coconut oil
a pinch of himalayan sea salt
2 handfuls fresh spinach rinsed
10 leaves fresh basil
tbsp chopped chives or 1 spring onion

METHOD

Blend all of the ingredients in a food processor and blend until the spinach breaks down.
Place in the fridge until you're ready to cook the pancakes.
